Meals



So a few posts back I gave a list of my stocked pantry items. My stocked refrigerator suffered greatly in the wake of our Cincinnati Hurricane. My refrigerator looked like a college student's after we threw the ruined items out. I had vodka, beer, and jelly that survived the power outage.
So I have over the weeks, restocked my fridge' and am functioning full force in the kitchen again. I promised I would post a menu for the week when I posted the stocked pantry, and now I can because we have all the things that I used again.
I went to the grocery today with my list for my items and I spent about $150.00 on this weeks groceries. However, it should go into the next week as well.
Tonight I am cooking a pork roast with cranberry, orange and ginger sauce in the crock pot. The pork roast was a manager special at Kroger, aka.. must buy because the sell by date was today. I got it for $4. The sauce was in the freezer section, it is a cranberry orange sauce. I mixed it with fresh ginger and a little water, set the crock pot for low for 2.5 hours.
I will serve it with baked apples, and sweet potato fries.
Monday: Crock Pot Italian Beef on Hoagy buns with provolone cheese and banana peppers or Italian peppers. Maybe a little pizza sauce. I took the liberty of making marinated mushrooms to go with them as well. Salad on the side. I will crock pot this overnight so I can take some to work for dinner.
Tuesday: Skyline. (recipe stolen from my friend Carrie's mother in law). The bucket of frozen skyline mixed with 1 pound of lean ground beef browned with chili powder. Place in crock pot on low for however long you'd like. Serve over noodles with your skyline favorites! Hopefully Mollie and her kids will be joining us.
Wed: Make your own Pizza night for the kids and dad.. mom will be at work.
Thursday: Spaghetti Carbonara with salad
Friday: Salsa Rosa Tossed with Spaghettini Topped with Grilled Flank Steak I modify this recipe by using roasted red peppers in the jar, and canned Serrano peppers.
Saturday: Meatloaf, mashed potatoes and salad.
Sunday: Spaghetti and Turkey Meatballs, salad.

That's it. It's healthy and easy.

Quite impressive! I really need to start doing this. Can I make a reservation for Friday night?

I want to come EVERY night. I guess the key is making a menu plan. That is my problem. I just try and make something based on what I have on hand, which ends up being nothing good, then we just go out.
Must make a menu. And stick to it.

Yes, I will also be taking reservations for FIVE! Yummy...wish my hubby wasn't so picky!
